Chewy gingerbread cookies with buckwheat and oats

These are our new favourites! They're a huge hit of 'gingerbread' and I got pleasenatlyy surprised that my children absolutely love them. They're chewy & dense too. Love Love Love!

I did them a few different ways hence the writing on the trays :) They are quick to throw together in your food processor

MAKES: 36 pieces although depends on how thick you roll           COOK TEMP: 150 deg

TIME: 10-15 mins

INGREDIENTS:

  • 1 1/4 cup       My Organics dates
  • 1/4 cup         My Organics almond meal
  • 1/4 cup         TheSource buckwheat groats
  • 3/4 cup        oats
  • 1Tb               gr cinnamon
  • 1Tb               gr ginger
  • 1/2 tsp         nutmeg
  • 1/4 tsp         cloves

 

METHOD:  

  1. Warm dates(this makes it quicker for dates to break down in mix)
  2. Add all the dry ingredients to the food processor
  3. Process until a meal or flour has been made
  4. Add dates - process until paste forms
  5. Roll out to 1/2cm thick between two pieces of greaseproof paper
  6. Cut into shapes
  7. There is no spread - place together on the tray
  8. Bake for 10 mins
  9. Allow to cool
  10. Dip in chocolate if you need that delicious addition :)
