Orange and Poppy Seed Loaf with Syrup

·         1 orange roughly chopped (use whole orange, do not peel. Just discard the ends where the skin may be too thick)

·         ½ cup coconut oil

·         2 eggs

·         ½ cup maple syrup

·         1 tsp vanilla extract

·         1 cup wholemeal SF flour (or wholemeal spelt with 1 tsp baking powder)

·         ½ cup almond meal

·         1 ½ tbsp. poppy seeds

Syrup – (optional but makes this loaf extra delicious)

·         Fresh juice of half an orange

·         2 tbsp honey

·         1 tbsp. nuttlex




1.       Preheat the oven to 170 degrees

2.       Grease and line a loaf tin

3.       Puree whole orange in food processor

4.       Add in coconut oil, eggs and maple syrup and vanilla extract. mix well

5.       Add in almond meal, flour and poppy seed and mix until combined

6.       Bake for approximately 40 minutes or until a skewer can be inserted and comes out clean

7.       Meanwhile place all syrup ingredients into a small saucepan and stir over medium heat until the nuttlex has melted. Let the mixture simmer on high for around 2 minutes, stirring occasionally.

8.       Once the loaf is cooked and still warm pierce several holes in it using a skewer and pour the syrup over the top.
