Prep: 30-40 mins
Chill: 2 hours
4 dried figs
1 cup roasted walnuts
1/4 cup desiccated coconut
1tsp coconut oil
Method: Place all ingredients into food processor until well mixed. Press into lined loaf tin. Chill to set in fridge.
1 cup soaked cashews(soak approx 3 hrs & the drain)
1/8 cup boiling hot water
1 tbs maple syrup
2 tsp lime juice or 1 tsp lemon plus 1 tsp lime juice
1 cup frozen raspberries with 1/4 cup water reduce over heat to 1/2 cup- cool slightly
Place soaked cashews into food processor and process until super smooth, add hot water as needed to assist in the blending.
Add all other ingredients into the food processor bowl and process until well combined and smooth.
Scrape into loaf tin and spread until evenly spread over tin. Place in freezer to chill.
Ingredients: TOPPING (not shown in image)
1/2 cup coconut oil
1/4 cup cacoa powder
3 tbs maple syrup
pinch sea salt
Warm/melt coconut oil and maple syrup together. Add the cacao powder and mix well - add sea salt
Allow to cool and pour over chilled slice to the whatever thickness you like :) Freeze and enjoy!
We've been messing around with the chilled cashew cream slices and this is the one that got the thumbs up from our harshest critics *insert husbands and children here!
It's a bit more involved than our usual however all our usual criteria is covered - GF, DF and no refined anything!
