Do you know anything about Gut health? I didn’t until just recently I believe it forms loads of issues that go undetected and present as other problems. I recently has some gut issues that I discovered while training for a big run. I kept getting a bad stitch & eventually the pain referred up in to my shoulder and that for me was the lightbulb moment. It was wind caught in my body and had nothing to do with not being able to breathe properly during intense exercise!

It was both a relief(I could keep running) & a pain in the bum because it meant I had to change my diet DRAMATICALLY! Here I was thinking ‘ I am super healthy, don’t eat loads of processed foods, how could I possibly have any issues?’

After visiting my naturopath, I was soon on a whole new path of discovery as she pointed out the ‘incidental sugars’ that I was putting in my  body. It was more of a ‘occupational hazard’ due to creating lots of deliciosness every week/fortnight I was also repeatedly TASTING every 15 mins.

So fast forward – strict elimination for 4 weeks, gradual re-intorduction of some foods, leave out lots of processed foods, get someone to help with the tasting and keep making some new staples like these gummy hearts! Filled with really good gut health, gelatin powder I use these as a finisher in the evening or as a snack during the day – particularly when I am craving something sweet. Thankfully my children love them too!

Coconut Blackberry Gummy Hearts

: Makes 15 shapes or 15x20 airtight container

Ingredients
  • ** Coconut Layer **
  • 3 tbs @gelatinhealth gelatin powder sourced from @Govitacairns
  • 1 1/2 cups coconut milk(full fat works best)
  • 2 tsp honey or maple syrup(more if you are new to these gummy treats)
  • 1/3 cup cool water
  • ** Blackberry Layer **
  • 3 tbs @gelatinhealth gelatin powder sourced from @Govitacairns
  • 1 1/2 cups blackberries(or berries of your choice)
  • 2 tsp honey or maple syrup(depending if you are new to gummies you may like to add more and scale back as you progress)
  • 1/3 cup cool water
Directions
  • Step 1 ** Coconut Layer **
  • Step 2 Dissolve gelatin in cool water – set aside – it will become globules, it’s ok the warm milk will dissolve them
  • Step 3 Warm coconut milk and maple syrup on the stove gently- make sure this doesn’t boil or get too hot (your gelatin will NOT work if it becomes to hot)
  • Step 4 Add gelatin mix to the coconut milk and blitz or whisk until smooth
  • Step 5 Set aside while doing the berry mix
  • Step 6 Once berry mix is ready, pour into cup or jug ready to pour into container
  • Step 7 ** Blackberry Layer **
  • Step 8 Dissolve gelatin in cool water – set aside – it will become globules, it’s ok the warm berries will dissolve it
  • Step 9 Warm blackberries and maple syrup(if using any) on the stove gently- make sure this doesn’t boil or get too hot (your gelatin will NOT work if it becomes to hot)
  • Step 10 Place warm berry mix into a blender & blitz until smooth
  • Step 11 Strain off the blackberry seeds(or leave in for added texture)
  • Step 12 Add gelatin mix to the blackberry puree and blitz until smooth
  • Step 13 Pour into a cup or jug so you can pour into the container at the same time as the coconut mix
  • Step 14 ** Combining Layers **
  • Step 15 Place both jugs/containers in the fridge to set for 2 hours
  • Step 16 At the same time pour the blackberry and the coconut in swirling motions into the lined container – you might want to use your finger or a spoon to get a good swirl happening
  • Step 17 Once both mixes are poured, place in the fridge for 2 hours to set
  • Step 18 once set, cut shapes or just cut into squares to snack on when the ‘craving’ hits you!
  • Step 19 Keep in an airtight container)
