soooooo I’ve decided to do something about my gut health – nothing extreme but just add goodness back into my diet that will assist my ‘funny tummy’ (& by funny I mean not processing food the way it should & me lacking in energy :))
It’s good to bring the children along for the ride too I reckon so, as you know my theory on encouraging them to eat ‘healthier’ foods is by mimicking – what better way to do this than by making ‘jellies’ in fun shapes!
I’ve sat on the sidelines for a while now & was really excited when I realised how healthy it is for us, how yummy it tasted, how EASY it was to make and how much the children ACTUALLY liked it!!! I have to be honest – the hardest thing was remembering to buy gelatin! 🙂
Blueberry Gummie Fish
If you don't have molds, it is easy enough to just lightly oil a plastic container and pour in mix to set

Ingredients
- 3 tbs @greatlakesgeletin beef gelatin(unflavoured which I sourced from @govitaCairns
- 1 tsp fresh nub of ginger
- 1 1/2 cup frozen or fresh blueberries
- 1/3 cup cool water
Directions
- Step 1 Dissolve gelatin in cool water – set aside – it will become globules, it’s ok the warm berries will dissolve it
- Step 2 Warm blueberries and ginger on the stove gently- make sure this doesn’t boil or get too hot (your gelatin will NOT work if it becomes to hot)
- Step 3 Place warm berry mix into a blender & blitz until smooth
- Step 4 Add gelatin mix to the blueberries and blitz until smooth
- Step 5 Pour into silicon molds
- Step 6 Place in the fridge to set for 2 hrs
- Step 7 Turn out & keep in airtight container
Coconut Gummie Fish

Ingredients

- 1 1/2 cup coconut milk
- 1/3 cup cool water
Directions
- Step 1 Dissolve gelatin in cool water – set aside – it will become globules, it’s ok the warm berries will dissolve it
- Step 2 Warm coconut milk and maple syrup on the stove gently- make sure this doesn’t boil or get too hot (your gelatin will NOT work if it becomes to hot)
- Step 3 Place coconut mix into a blender & blitz until smooth
- Step 4 Add gelatin mix to the coconut milk and blitz until smooth
- Step 5 Pour into silicon moulds
- Step 6 NOTE: if you don’t have moulds, easy enough to just lightly oil a plastic container and pour in mix to set
- Step 7 Place in the fridge to set for 2 hrs
- Step 8 Turn out & keep in airtight container
