Pepita Oat Jamberry Cookies

whoa! I know that is a mouthful to say but these cookies are scrumscious!!  They’re DF, NF & EG so great for lunchboxes & perfect for…..right now 🙂

I do look for ways to make my recipes allergen friendly as it is certainly on the rise not only for intestinal issues, but behavioral issues as well. I am blessed and I know it, apart from my dairy intolerances the rest of the family have no issues. This particular recipe I have used Pepita meal or pumpkin seeds simply thrown into the food processor until fine.

Pepita Oat Jamberry Cookies

Ingredients
  • 1 cup oat flour(this is just oats pulsed in a food processor until fine meal)
  • 1/4 cup pepita flour(pepita seeds pulsed in food processor until finer than crumbs
  • 1/8 tsp ground salt
  • 1/4 cup honey
  • 2tbs coconut oil
Directions
  • Step 1 Mix dry ingredients
  • Step 2 Add wet ingredients
  • Step 3 Mix will be slightly dry but you should be able to ‘pinch’ test it
  • Step 4 Roll into balls – place on tray, allow room to flatten slightly
  • Step 5 Press down and using the handle of a wooden spoon make an indent so you can fill these babies with your lovely berry jam (recipe below)
  • Step 6 Bake for 10 mins unfilled
  • Step 7 Bring out tray, fill with jam, back in the oven for another 5-7 mins
  • Step 8 Cookies should be firm when picked up off the tray(hot)
  • Step 9 Cookies will soften slighlty in the fridge & these can be frozen

Ingredients
  • 2 cups frozen raspberries
  • 1 cup frozen blueberries
  • 1 tbs honey
Directions
  • Step 1 Place raspberries only and honey together in a saucepan on the stove – if you need to add a tbsp of water otherwise just put on a gentle heat and stir until moisture is released from raspberries.
  • Step 2 Gently simmer until raspberries start to break down and mix begins to thicken.
  • Step 3 Add blueberries and keep on stove for another 5 mins
  • Step 4 Allow to cool before using otherwise it will soak into cookie mix quickly
