Chocolate cookie bites

Firm cookies are a favourite of mine, aahhhh heaven x  The remind me of the traditional cookies I grew up with, you know the ones that were filled with refined sugars and flours – not these little treats!

Don’t be deterred by the GF, DF NF header because these are super little cookies, especially for dipping or dunking in a coffee! I have to think more laterally when it comes to accomodating Nut allergens which are becoming more and more prevalent so that’s the reason behind the pepita butter. It’s easy to make – just the same as any nut butter and one I should put up on the blog! haha

Nut free, Gluten Free, Dairy free Chocolate cookie bites

  • 2/3 cup GF flour
  • 1 1/5 tsp cacao powder
  • 1/2 tsp baking powder
  • 2 tbs honey
  • 2 tbs coconut oil
  • 1.5tbs pepita butter(this is just mealed pepita seeds until spread forms)
  • 2tbs almond milk(or any type of milk can be used)
  • Step 1 Turn oven on to 170 deg
  • Step 2 Warm the pepita butter with honey
  • Step 3 Add coconut oil and milk to honey mix – mix until well combined
  • Step 4 Place all dry ingredients into a bowl, make a well in the middle
  • Step 5 Add the wet ingredients and mix until well combined
  • Step 6 Dough will be slightly wet(this can depend on the brand of GF flour used)
  • Step 7 Allow to rest for 10 mins – this allows flours to absorb moisture and mix to firm
  • Step 8 Using a teaspoon as a scoop(dip your spoon in water if your mix is slightly wet) roll mix into balls
  • Step 9 Place on baking tray – very little spread with these bites
  • Step 10 Bake for 15-20 mins – careful not to overbake as they will become very firm
  • Step 11 Allow to cool on trays
  • Step 12 You could then Dip in chocolate, Fill with a peanut butter & maple syrup spread or Eat as the are – perfect to dip into a hot coffee or chia – haven’t tried tumeric yet 🙂
