You know when you’re looking for something more? I don’t know, something with some zing? I was checking out @livelovenourish for a raw treat & I found a really yummy Fig Cheesecake…… however not having any figs in the cupboard I changed it around a little and Yaya! it worked out, it tastes sensational and it ticked all the boxes I was looking for(but didn’t know it at the time lol) here it is :0

As I don’t add a lot of liquid to this ‘not’ cheesecake it will not need to be frozen – it can be refrigerated too!

I hope you enjoy this one as much as we are – the only thing it trying not to eat too much at once! Way to easy to eat 🙂

Lime & strawberry 'not' cheesecake

  • 1 cup dates
  • 1 cup toasted hazelnuts
  • 2 cups soaked cashews (2 hrs)
  • 1/3 cup coconut oil
  • 4 zest and juice (if you want even more zing - reduce juice on the stove)
  • 2tb maple syrup
  • 1/2 cup frozen pureed strawberries - if you're like me and love bold flavours - puree 1 cup of strawberries and then reduce on the stove.
  • Step 1 Blitz dates and hazelnuts together until paste forms
  • Step 2 press into lined baking tin(square)
  • Step 3 Place into freezer to harden
  • Step 4 Blitz soaked cashews with coconut oil, maple syrup and lime juice until smooth(sharp bladees will make this appear like cream cheese)
  • Step 5 Halve mix – set one half aside
  • Step 6 Spread lime mix over hazelnut base evenly
  • Step 7 Place in freezer to set
  • Step 8 Once set, puree frozen strawberries & gently fold through set aside lime base until well combined
  • Step 9 Spread over the lime mix(which should be set)
  • Step 10 Place in freezer & allow to set completely
  • Step 11 Eat either frozen or fresh but not all at once 🙂
