Orange and Poppy Seed Loaf with Syrup

Ingredients
  • 1 orange roughly chopped (use whole orange, do not peel. Just discard the ends where the skin may be too thick)
  • ½ cup coconut oil
  • 2 eggs
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup wholemeal SF flour (or wholemeal spelt with 1 tsp baking powder)
  • ½ cup almond meal
  • 1 ½ tbsp. poppy seeds
  • Fresh juice of half an orange
  • 2 tbsp honey
  • 1 tbsp. nuttlex
Directions
  • Step 1 1. Preheat the oven to 170 degrees
  • Step 2 2. Grease and line a loaf tin
  • Step 3 3. Puree whole orange in food processor
  • Step 4 4. Add in coconut oil, eggs and maple syrup and vanilla extract. mix well
  • Step 5 5. Add in almond meal, flour and poppy seed and mix until combined
  • Step 6 6. Bake for approximately 40 minutes or until a skewer can be inserted and comes out clean
  • Step 7 Meanwhile make the syrup by placing the juice of half an orange, honey and nettles into a small saucepan and stir over medium heat until the nuttlex has melted. Let the mixture simmer on high for around 2 minutes, stirring occasionally.
  • Step 8 Once the loaf is cooked and still warm pierce several holes in it using a skewer and pour the syrup over the top.
