Refreshingly Delicious! Use a fork to mix together as this will help keep the oats in shape. Be careful not to over bake as the nuts will become bitter. In Cairns, especially in the summer, with high humidity we keep the granola in an airtight container in the fridge giving it a longer shelf life. We just love the refreshing hit of ginger!

Ingredients
  • 2 cups oats
  • 1 cup mixed pepitas, mac nuts, cashews
  • ½ tsp ground cinnamon
  • 3 tbs honey
  • 3 tbs coconut oil
  • 2 tsp finely chopped naked ginger(buderim ginger at its best!)
  • ½ cup moist coconut flakes
  • ½ cup banana puree
Directions
  • Step 1 Preheat fan forced oven to 135°C (155°C conventional)
  • Step 2 Greaseproof paper a baking tray
  • Step 3 Combine dry ingredients in a bowl
  • Step 4 Mix wet ingredients well together
  • Step 5 Combine dry ingredients with wet ingredients using a fork until evenly mixed
  • Step 6 Spread granola evenly onto tray
  • Step 7 Bake for 15 mins – turn tray, bake a further 5-10 mins – careful not to over bake
